Ryuji is the inspiration behind the restaurant at 57, having worked in kitchens in Japan for 8 years. He has been at 57 since October 2008 and was previously Head Chef at Stageone in Ochanomizu for 3 years. Ryuji brings a wealth of experience to the dishes on our menu.
